Mini Ham and Cheese Quinoa Cups {Iowa Girl Eats}

I don’t really have a good story to go along with this post. I wanted something easy and something for which I wouldn’t have to go to the store. I found this recipe for Ham and Cheese Quinoa Cups on Pinterest from Iowa Girl Eats. It seems to me that EVERYONE in the Midwest is really good at cooking. Maybe there is something in the water there? Anywho, I did not have ham but I did have sausage. Either one works well with eggs, so it’s all good. I was a little worried about the quinoa and how it would affect the texture and thus effecting whether or not my kids would eat. I was relieved that they loved it and asked for seconds! I love how versatile this recipe is and will be adding it into the rotation!


Creamy Peanut Butter Banana Smoothie {Chiquita Bananas}

This should be called a milkshake. It is almost as good as getting a peanut butter shake at Lenny’s. In fact, it is better! This drink is guilt-free. (Peanut butter brings me no guilt.) With 18 grams of protein per serving (depending on your yogurt), I call it lunch. In fact, I’m drinking one right now for lunch. The slight tang from the yogurt is perfect, not overpowering. I use natural peanut butter with no sugar. I imagine it would taste different if you used Jiffy or something. Check out the recipe from Chiquita Bananas right here.

Pineapple Ginger Smoothie {Gimme Some Oven}

Breakfast for dinner was my favorite as a kid.  The other night I made Gimme Some Oven‘s Pineapple Ginger Smoothies to go along with gingerbread waffles. (Waffle review to come later this week.) The preschooler and I, in particular, love fresh pineapple. (And this one turned out perfectly ripe and sweet!) Check out the smoothie recipe here.

I don’t think I’ve ever followed a recipe for a smoothie before. I usually just keep frozen fruit on hand and mix and match without measuring. But this turned out to be a beautiful smoothie, in both color and consistency–not too thick or too runny. It also occurred to me that it would be an excellent recipe when you’re feeling sick. Ginger is so good for you, and pineapple feels soothing on a sore throat.

Verdict? Fail. Taste is everything and only my man could finish drinking it. The fresh ginger gave it too sharp a flavor for the rest of us. And even though he finished his, he said he didn’t like it. He thought it needed more pineapple. I think it needed less ginger. Either way, it didn’t fly for us. If you love that spicy ginger bite, though, give it a try and share what you think!

Buttermilk-Blueberry Breakfast Cake {Alexandra’s Kitchen}

Blueberries + breakfast= my favorite. The recipe for Buttermilk-Blueberry Cake over at Alexandra’s Kitchen is a great idea: she wanted it “cake-like but not dessert-like.” It seemed just the thing to bring over for the coffee-and-play-date my friend and I had planned together. (We hype the kids up on coffee and then she and I play.) Check out Alexandra’s recipe here.

This batter is very thick. It only has one egg and just a bit of buttermilk to combat all the dry ingredients. But again, I trusted that played into the “not dessert-like” goal. My friend wondered if it would have a scone-like texture before we cut into it. Nope: totally moist and even a tad bit like dump cake. (Is there a middle ground between dump cake and regular cake? Soft cake?) If you don’t like that sort of softness you could certainly add cooking time. My friend and I like it like that.

Verdict? Pass. Delicious! So…think you’ll make it?

“Best Waffles Ever”

I got a waffle maker for my birthday and last night’s breakfast-for-dinner was just the time to give it a whirl. I found this pin from Mr. Breakfast and thought it would be a good, standard recipe to start with. Check it out here.

I used to think the only difference between pancake and waffle batter was the oil. (We don’t want those babies to stick to the iron.) But Mr. Breakfast introduced a new concept to me: beating the egg whites separately to make the waffles extra light inside. He’s really on to something! The batter was like a cloud, and the waffles had the perfect crispness on the outside and fluffiness within. (If you prefer your waffles somewhat soft on the outside, putting them in the oven to stay warm at 200 degrees does the trick. A friend gave me that tip, and she was right! Everyone wins.)  

Verdict? Pass. Forget pancakes. These waffles are my new best friend! Have you ever beat the egg whites in waffle batter before? What do you think?

“Orange Blueberry French Toast”

Guess what we had for breakfast this morning?  Before bed last night I did a Pinterest search for “blueberry French toast” and stumbled upon this bad boy. Don’t you just love when you already have all the ingredients? Both the photo above and the recipe are found here on The Curvy Carrot.

Now when I said I already had all the ingredients, that was a half-truth. No brioche around here. I used plain ol’ wheat bread. I’m not a go-to-the-store-for-one-ingredient kind of gal. I admit, I had some skepticism that it would be too orange-y. I added a touch more maple syrup to the sauce and I omitted the orange zest because of that. You know what? It was a good balance. The sweet and acidic flavors blended really well. If you’re crazy about citrus, go with the whole orange shebang as The Crazy Carrot  did.

Verdict? Pass. It may not have flown me over the moon, but it was a fresh twist on a breakfast standard. I also love how they created their own syrup! What do you think of this recipe?

“Sticky Bun Breakfast Ring”

I’m a sucker for a sweet, sticky breakfast. But a sweet, sticky breakfast as simple as Pillsbury rolls? Count me in. The photo I found on Pinterest took me here to The Jones Way blog, but from there I went to the original recipe at All Things Delicious. As I gathered from the pin, this is the sort of wow-your-kids breakfast you can make while your coffee is still brewing and your eyes are half-shut.

Here’s the idea: throw Pillsbury biscuits in a bundt pan, cover them with all sorts of breakfast sweetness like maple syrup and brown sugar and butter and happy thoughts. Bake them. Flip them onto a plate.

The kids loved them. They were, indeed, as tasty as the photo suggests.

Verdict? Pass.
